Canadian Select sources wild salmon exclusively from select British Columbia fisheries to ensure premium grade and exceptional quality. Each fillet is expertly prepared and smoked in BC to precise standards.
The salmon is cold-smoked over hardwood—80% cherry wood—at 78°F for five hours, creating a delicate, perfectly balanced blend of natural salmon flavour and smooth cherry wood smoke.
After smoking, the salmon is portioned into 113g and 227g servings and sealed using the “retort” method. This four-layer foil pouch is vacuum-sealed and heat-processed for 70 minutes at 248°F and 15 psi, preserving freshness and flavour without the need for additives or preservatives.
Quality and safety are verified through sampling and inspection by the Canadian Food Inspection Agency.
